Baking Bonanza

Today's baking involved chocolate walnut flourless cookies. They are very similar to French meringue cookies, but more powdered (icing) sugar than egg whites. I added walnuts to mix and then a few more on top before the cookies were baked.

I have to tell you, these are delicious. Who needs flour? This now brings the baking bonanza to a batch of homemade caramels, white chocolate chunk-macadamia nut cookies, pistachio and chocolate biscotti, and three kinds of scones: cranberry, raspberry, and cherry. And yes we have clotted cream for those.

Will's parents are arriving tonight and after she sees the baking bonanza, she will most likely call him fat, and me responsible! But, it is oh delicious! And don't worry, I intend to share.

I am in the middle of my own baking bonanza. So far we have shortbread with tart cherries, angel thumbprints with raspberry preserves, Carol's oatmeal cookies, springerles, springerles with almond instead of anise, spice button cookies, and swedish sugar cookies. The last I'm not so impressed with but the others are keepers. Still have a twice chocolate cake and Mammy's pound cake to go. Oh! There's also sweet and spicy nuts and Dad promises to make peanut brittle. Carol's bourbon balls may make an appearance but the caramels and the toffee - are secreted away.

So we are doing our share to uphold the "fat" tradition! ;)
